Restore Deleted iMessages on Mac
You can only restore the whole iMessage database, not individual conversations or messages. You need to replace the current database with an earlier version. so you will  lose all later changes.

  1. Sign out all iMessage accounts and quit Messages.
  2. Press and hold down the option key and  choose Go -> Library from the Finder menu bar.
  3. A folder window will open.
  4. Restore the “Messages” subfolder named from a backup told backup which contain deleted iMessage contact.
  5. Then log out and log back in.

Note : If you’re using OS X 10.9 or later, delete the subfolder Containers/com.apple.iChat. If you don’t have a backup, messages can’t be restored.

Thanks for the advice. It is not clear though.

How do I "restore the messages subfolder?"
Should I wave my hand and say "restore?"
There is no "restore" button.
"Named from a backup told backup" means nothing. The word "Backup" is not visible anywhere.

To clarify, here's what I did:
1) Sign out all iMessage accounts and quit Messages.
2) Press and hold down the option key and choose Go -> Library from the Finder menu bar.
3) A folder window will open.
4) Click on the "Messages" folder
5) Click on the "Archives" subfolder.
6) Select the date of the message (s) you are looking for.
7) You should see all the messages you have sent/received on that particular date.
8) Double click the message to restore it to iMessages.
I'm using OS X Yosemite 10.10.5.

I did all of the instructions but when I double click it the contact name goes to imessages and the conversation does not show up, only the contact name.
